Kid-Friendly Whole Wheat Hummus Roll-Ups

I absolutely adore hummus and so does K-Bear, who loves to dip into it with thinly sliced vegetables and whole grain crackers. She also gobbles it up (as do I!) in these roll-ups, fun finger food made even healthier by using whole wheat tortillas and fresh vegetables.

This recipe makes four small roll-ups, perfect for a summertime lunch, as they pack very easily for the beach, pool, park, trail or other excursion. For a heartier meal, serve with Italian Vegetable Soup for extra dipping fun!

Ingredients

  • 1 whole wheat tortilla, cut into quarters
  • 1/4 c. hummus
  • 1/4 c. shredded cheddar or Colby jack cheese (optional)
  • 1/4 c. diced tomato
  • 1/2 of a ripe avocado, sliced the long way

Directions

Spread hummus evenly across all tortillas. Top each tortilla equally down the middle with cheese, tomato and avocado. Kids will love to help with each part of this task. I purposely built in a bit of extra toppings so they can sample freely as they go!

Roll-up, serve and enjoy the ensuing smiles.
